Chocolate Chip Banana Muffins -Vegan

Wet Ingredients:

2 medium bananas, peeled and cut into small pieces

1/4 cup water

1/4 cup maple flavor agave nectar or agave nectar

3 Tbs vegetable oil

1 tsp vanilla

Dry Ingredients:

1 C white flour

1/2 C oat flour (You can make oat flour by grinding fresh rolled oats in a spice grinder or grain mill

1 1/2 tsp baking powder

1 tsp ground cinnamon

1/4 tsp ground ginger

1/4 tsp salt

Chunky Ingredients:

1/3 cup raw cashews, coarsely chopped

1/3 cup semi-sweet chocolate chips

Preheat oven to 375 degrees.

Spray a muffin tin with non stick cooking spray.

In a medium bowl, combine the dry ingredients.

In a small bowl, mash the banana with a fork until smooth.

Stir in remaining wet ingredients.

Add the wet ingredients to dry ingredients and stir until just blended. Add chunky ingredients and mix until blended.

Fill prepared muffin cups 1/4 full.

Bake for 18 to 22 minutes or until a toothpick inserted in the center comes out clean.

Serve warm or at room temperature.

Store extra muffins in an airtight plastic container or zipper-lock bag.

Muffins can be frozen.
