CHOCOLATE DROP COOKIES
In a small bowl, whip together with a small whisk or fork until frothy:
2 Tbs warm water
1 1/2 tsp Ener-G Egg
Set aside.
In another small bowl combine:
1/2 c soy milk
1 tsp white vinegar or apple cider vinegar
Set asiden to allow the soy milk to get slightly thick.
In a small size microwave safe bowl, melt in a microwave for 1 1/2 minute or in a double boiler:
2 1 oz squares Baker's unsweetened chocolate
Stir until the chocolate is smooth.
In a medium bowl combine:
1/2 c Non-Hydrogenated margarine with 8-9 grams of fat
1 c brown sugar
Cream together.
Add to the creamed margarine brown sugar the melted chocolate.
Then add the Ener-g Egg mixture and the Soy Milk mixture.
Mix until creamy.
Add:
1 1/2 c flour
1/2 tsp baking soda
Mix well.
If desired, add:
1/2 c walnuts, chopped
Drop spoon fulls of dough on a parchment paper covered cookie sheets.
Bake at 375degrees F for about 10 minutes.
Makes 18 cookies.
