Flax Cream of Wheat

I grind my own flax seeds to us in this and other recipes with my Soyabella Soy Milk Maker.

You can use any grain mill or grinder.

If you want to grind small batches it is best to use a grinder that will mill small amounts. I suggest the Krups Coffee, Herb & Spice Mill GX4100, the Toastmaster Coffee Spice Grinder CG 7 from Salton or the Kidco Electric Food Mill F900.

I keep the raw flax seeds that have not been ground in the freezer while the ground flax seeds I keep in the refrigerator. I is best to use your ground flax seeds with in 1 week. Once Flax seeds have been ground they can go rancid with in 1 to 2 weeks.

Flax Cream of Wheat

For a single serving:

In a Sauce Pan combine

1 cup milk of any kind. I use soy, almond or rice milk

3 Tbs 1 minute Cream of Wheat

Bring to a simmer while stirring. Simmer for 1 minute.

Turn off heat and add

1 Tbs ground flax seeds

2 Tbs brown sugar

1 Tbs Smart Balance Light tub margarine made with Flax Oil. (Optional)

There is 5 grams of fat in 1 Tablespoon in this Margarine.
