Wash your favorite fresh ripe fruit.

Good fruits to combine for fruit leather are Strawberries and Bananas, Strawberries and cooked Rhubarb, Strawberries and Pineapple, Pineapple and Bananas and Apples, cinnamon and sugar.

Cut off stems, and bad spots. Remove pits and seeds. You may leave the skins on if desired. Puree the prepared fruit in a blender until smooth.

Pour 1 1/2 to 2 cups of puree on to a ParaFlexx sheet or parchment paper covered trays.

Since the edges tend to dry more rapidly, the poured puree should be 1/8 inch thick at the center and 1/4 inch thick at the edges.

Place the puree trays in the dehydrator. Set the temperature at 135 degrees.

Average drying time for leathers is 4 to 6 hours. Drying time depends on the water content of the fruit puree.

You can tell the leather is dry when it is shiny and no longer sticky to the touch.

Allow the leather to cool before peeling it off of the tray.

Roll it up or cut it into pieces. Store in plastic bags, air tight containers or in vacuum seal bags.
