It is best to stay away from refined flour in any form and sugar to loose weight. Eat grains in as whole a form as possible. The more cut up the grain the more it can be absorbed. Also white bread is missing a lot of fiber and nutrients. So if you have to have bread once in a while, go for the whole grains with out oil or High Fructose Corn Syrup.
High Fructose Corn Syrup is in many manufactured products and is worth avoiding. It is like eating concentrated sugar. Sugar should also be eaten in its natural state like whole apples instead of apple juice.
Now a note about fruits. If you want to loose weight, eat no more than 1-2 fruits a day. Less would help with the weight loss.
Lets not forget Oils. Stay away from them. Yes the human body needs oil, but we do not need extra oil. We get enough fats in our diet just by eating whole fruits, vegetables and grains. We do not need to squeeze more oil out of vegetables to supplement out diet. As a matter of fact excess oil is not only bad for our weight, but is also bad for our arteries.
The Vegan diet requires a whole new way of thinking. Change the way you think a complete meal is made up of. For example it is okay to eat just green beans, sweet potato and a salad for lunch. You might say I did not get my protein. No problem, most Americans get too much protein in their diets and you can have Minestrone Soup for dinner, which has a days worth of protein in it.
Snack on Corn Thins which are like rice cakes but made from corn and are half as thick as rice cakes. They are made by Real Foods and I purchase them at Whole Foods. They are like eating a big cracker with a good corn flavor. Rice Cakes are also a very good snack.
After you spend some time reading labels and learn what is low in fat, sugar and refinement you will build up a variety of foods and recipes you like. Go a head and eat them over and over if you wish. Don't worry about what others think or say about what you eat as long as you eat low fat, low sugar and as unrefined as possible.
