Savory Sandwiches

1 15 oz can garbanzo beans Rinsed and drained

1 Tbs lemon juice

1/4 c vegan mayonnaise

1/2 c finely chopped celery

1/4 c sweet relish

1/4 c finely chopped green onion

8 slices whole wheat bread

Mustard

Tomatoes

Lettuce

Cream garbanzo beans, lemon juice and vegan mayonnaise in a food processor until creamy.

Place in a bowl and add chopped celery, relish and onions to the processed garbanzo beans.

Mix well. Chill to blend flavors.

Spread mustard on bread slices, spread 1/2 cup of the spread mix on 4 of the bread slices.

Add lettuce and tomatoes if desired.
