When shopping for a pasta machines be sure you know which size you are paying for. The pasta machines come in 2 sizes. The large is 7 inches wide and the small is 5 inches wide. Construction
Steel construction with a chrome finish.
The dough rollers are stainless steel and will not rust.
The handle is made from a strong resin plastic (bakelite).
Crank and Clamp
You can remove the crank handle and clamp for easy storage.
The clamp will fit on a table, cutting board or counter top about 1.75 inches (about 45mm) or less.
Rollers and Regulator
The pasta machines roller is used for kneading the dough and for rolling the dough to your desired thickness.
You can adjust dough thickness by increasing or decreasing the spread between the pasta machines two rollers. There are 7 thickness settings on the pasta machines .
An adjustment knob is on the side. You pull the knob out from the pasta machines side and turn it to one of the dough thickness settings you desire.
Start rolling the dough through the rollers at setting number 7 which is the thickest and then move the pasta machine roller settings to a lower number each time you run the dough through the pasta machine to get a thinner dough.
You can adjust the pasta machines thickness as thin as .1mm thick (1/10 of a mm) to as thick as 1 mm.
Comes with 2 sets of steel cutters for different widths of noodles.
One cutter makes pasta to about 2mm wide.
The other cuts pasta to about 6mm (slightly less than 1/4 inch) wide.
The pasta machines roller is 5 inches wide (just under 180mm)
Making Pasta and Noodles
You can use your own pasta or noodle dough recipe you desire or follow the dough recipe that comes in the manual. If it does not cut the dough into neat noodles, the dough is not thick and not dry enough. You will need to add more flour to the dough and run the it through again to get the desired thickness, then run the sheet of dough through the cutters to make the noodles you want.
You can make lasagna noodles by running the dough through the pasta machines roller and not through the cutters. You can trim the dough to the width you wish for lasagna noodles after you have adjusted the rollers to your desired thickness..
Use the same process for the making ravioli dough as you do for making lasagna noodles.
To cut dough for linguini or fettuccine, run the dough through the pasta machines rollers to form your desired thickness. Once your dough is the thickness you want, run the flat dough through one of the 2 cutter for the desired width of noodles you want.
Use and Care
Pasta machines come with a use and care.
The first time you use any pasta machines, you need to wipe the parts with a damp cloth.
DO NOT run any pasta machines under running water!
Pass a piece of dough through the pasta machines rollers several times to remove any factory residue from the places you can not clean with a damp cloth. Throw the piece of dough away after running it through several times.
Clean pasta machines immediately after use while any bits of dough left in is pliable and easy to remove. Clean according to the instructions that come with the pasta machines.
